Outside the Box – Christy Johnson
The RSIOC Summer Camp is off to a fantastic start! The kids are having so much fun learning how to cook. Some of the items that students have made include a guacamole dish, a pasta dish, no-bake granola, and fruit juice Popsicles. The best part is that they are using vegetables that are grown in the on-campus student garden!
Students enjoy smelling the fragrant basil and harvesting beautiful vegetables like zucchini. The students really enjoy getting their hands dirty, picking up worms, listening to the garden sounds and learning all about what it takes to make a healthy garden.
RSIOC summer camp students are also learning greetings, colors, shapes, numbers, poems and songs in Chinese and Spanish!
